Quick and easy recipe for breakfast with only 2 main ingredients - ricotta and tomatoes.
Ingredients -
- 1 piece of your favourite bread
- 2-3 table spoon of ricotta spread
- a handful of cherry tomatoes
- olive oil
- salt
- pepper
- chives (optional)
- lemon (optional)
- mint (optional)
Instructions -
Heat up the pan over medium heat. Drizzle the oil over then sauté the cherry tomatoes till it is soften. Season it with some salt and pepper. Put in the chives right before removing the tomatoes from the pan.
Toast your bread till crispy then spread the ricotta cheese over generously. Put the tomatoes on top and season it with more pepper, salt and lemon if you want . Garnish with some mint leaves.
For the drink, I made a smoothie by blending frozen zucchini, avocado, coconut yogurt coconut milk and coconut sugar altogether. Simply delicious !
