I have made this Burrito Bowl a few times and love it! For me, food is more than just something that fills me up. I want to fully enjoy eating and have fun making it as well. Not only it is packed with lean protein but also full of flavors from beans, avocado, mixed salads, garlic, lime and paprika.
A well balance of protein, carbs and healthy fats!
This recipe is also perfect for meal prep in which you can make the rice and chicken in advance and prepare the vegetables /garnishing right before eating for freshness. I normally prep my food for 2-3 days at one go and prep my meals twice a week. I know cooking can be time-consuming at times but if you know how to, it can be super quick & easy. So for now, let's get started making this delicious Burrito Bowl.
Ingredients -
**This list of ingredients can make 2 portions of the burrito bowl which you can keep 1 for your next meal or for your family member.
For the rice
- 1 cup of uncooked rice
- 2 cups of water ( you can also replace water with chicken stocks for extra flavor)
- 1 clove of garlic, minced
- 1 tbsp of olive oil
- 1 tbsp of lime juice
- a pinch of salt
For the chicken-
- 500 grams of chicken ( 2 chicken thighs)
- 1 tbsp of lime juice (freshly squeezed)
- 1/2 tbsp of olive oil
- 1 tsp of cumin
- 1 tsp of salt
- 1/2 tsp of chili powder
For the topping & garnishing -
- 2 tbsp of baked black beans (canned black beans)
- 1 avocado, sliced
- 1 medium Japanese cucumber, cubed
- a handful of cherry tomatoes, halved
- half a bell pepper ( any color), chopped
- 2 handfuls of greens salad ( I like to buy the pre-packed mixed salad which can easily be found at any supermarket). You can also use kale, spinach, lettuce, or any of your favorite greens
- salt and pepper to taste
- paprika powder
- a handful of coriander (optional)
For dressing -
- A handful of coriander
- 2 tbsp of sour cream
- salt to taste
Instructions -
Marinate the chicken - Mix the chicken with lime juice, olive oil, cumin, salt, and chili powder. Marinade for at least 15 minutes or overnight. Grill the chicken till it's golden on both sides.
Cook the rice - Put together the rice, water, minced garlic, olive oil and a pinch of salt in the rice cooking pot. Once the rice is cooked, put it aside to cool down. Mix the rice with the lime juice. Season to taste with salt and pepper, if needed. Set aside.
Prepare the mixed salad by putting the chopped cherry tomatoes, cucumbers and bell peppers altogether. Squeeze 2 slices of lime over the salad. Add in half a teaspoon of pink salt. Mix well and refrigerate for at least 15 minutes.
Prepare the dressing - Put the coriander and sour cream in the blender and blend till smooth. Season to taste with salt, if needed.
Time to plate! Put the lime rice, chicken, red beans, mixed salads and sliced avocado in your favorite bowl. Sprinkle with paprika powder to spice up your dish. I love coriander so I put some over my bowl for extra garnishing but it's totally optional.
