Beets & Mozzarella Cheese Salad

On days that you feel like having a light lunch or dinner, give this beetroot salad a try! It's light, simple, gluten-free and low carb!

Ingredients

50 g mozzarella cheese

70 g beets (cooked and chopped)

1 orange ( alternative : apple)

3/4 tsp olive oil (extra virgin)

1 tbsp balsamic vinegar ( alternative : red wine vinegar)

a pinch of salt

a handful of mint leaves (optional)



Instructions

Peel and chope orange in thick pieces.

On a salad plate, layer orange, beetroot and mozzarella cheese.

Season lightly with a pinch of salt.

Combine the oil and vinegar and drizzle on top of the salad.

Enjoy!
